Grilling meats and vegetables over charcoal.

Grilling refers to cooking food over hot coals or some other heat source like gas burners. Grilling typically creates a crust on the outside of food that seals in juices and flavor. Since grilling applies heat to one side of the food at a time, the item being grilled should be turned over to prevent burning and to facilitate even cooking.

Meats and vegetables can be seasoned or marinated prior to grilling.
