Swiss Cheese

Refers to a variety of pale yellow, firm cheese, originating in Swizterland, having a sharp flavor. Swiss cheese is also characterized by having many holes, called eyes. The eyes are formed by bacteria that generate produce carbon dioxide gas, which expands to form the holes. The cheese's flavor is generated in the process. Generally, the bigger the eyes, the more pronounced the flavor.
