An annual plant (Spinacia oleracea) of the family Chenopodiaceae (goosefoot) whose green leaves are eaten as a vegetable, cooked or eaten raw in salads. Spinach is rich in iron, and vitamins A and C. The plant originated in southwest Asia and was introduced to Spain in the 8th century, with the Spaniards eventually bringing it to the United States.
