Fish Sauce

A fermented condiment derived from fish. Fish sauce comes in many varieties, made from different species of fish or different parts of fish depending on geography and culture. Fish sauce is often used in Southeast Asian cooking and as a dipping sauce for pork, chicken, fish or shrimp. In southern China, fish sauce is used as an ingredient in soups or as a cooking oil.
