Sirloin

Sirloin refers to a cut of beef that continues from the tenderloin, from the lower portion of the ribs. Sirloin is considered to be among the cheapest of premium steaks because it is not as tender as the tenderloin, since the muscles do more work. Sirloin, however, is typically more flavorful than short loin, but less tender as well.
