Paneer is a cheese commonly found in Indian, Banglasdeshi and Pakistani cuisine.

Paneer is an unaged, pressed cheese (i.e. farmer's cheese), that is typically moist and crumbly.

Paneer is prepared by adding an acidic food, like vinegar or lemon juice, to hot milk to separate the curds and whey. These curds are then drained in a cheesecloth and the water is pressed out. The cheese is then dipped in cold water for a few hours, improving its texture.
