Sweet potatoes , honey and spices

Original recipe serves 12.

Ingredients

1 teaspoon salt
1/4 cup American cheese
1/2 cup honey
1 cup sweet potatoes ; pulp from 1 1/2 lbs.
1/4 cup yogurt
1 1/4 teaspoons baking soda
olive oil ; Cooking spray, enough to coat pan
1 1/2 cups all-purpose flour
1 egg(s)
1 cup apple juice
1/4 teaspoon nutmeg
2 teaspoons cinnamon
1/4 teaspoon anise

Preparation:

Preheat oven to 350. Spray a 9x5 in. pan with cooking spray and lightly dust with flour. In a saucepan over medium heat mix apple juice, anise, cinnamon and simmer for 10 min. In a bowl sift flour, baking soda and salt and stir in sweet potato pulp. In another bowl combine honey, yogurt, cheese and 1 egg and fold into the potato mix. Bake 60-70 min.
