  • cinnamon ; to taste
  • 2 tablespoons butter
  • 3 egg(s) ; beaten
  • 1 tablespoon milk
  • 4 sheets matzo

  • Directions

    Wet the sheets of matzoh by running them under water. In a bowl, combine the beaten egg, milk and matzoh, breaking up the matzoh into tiny pieces with a fork. Melt butter in a large skillet on medium-high heat. Place half of the mixture in the skillet, flattening down with a spatula to make a pancake, and fry for about 1 or 2 minutes on each side, until egg is cooked through and matzoh brie is firm. Do the same with other half of the egg and matzoh mixture. Transfer to serving plates and sprinkle with sugar and cinnamon to taste.
