Almond and spice cookies that go perfect with tea.

Original recipe serves 10.

Ingredients

1/4 teaspoon salt
1 1/3 cups confectioner's sugar ; divided
1 teaspoon almond extract
3/4 teaspoon allspice
3/4 cup almonds ; toasted, finely chopped
1 cup all-purpose flour
1/2 cup butter ; At room temperature, unsalted
2 teaspoons vanilla extract
1/2 teaspoon cinnamon ; ground
3/4 teaspoon cardamom

Preparation:

Preheat oven to 350F. In a medium bowl, combine vanilla and almond extracts, spices, sugar, and salt and beat with an electric mixer. Beat in flour, then stir in almonds. Roll dough into tablespoon-sized balls and place in on a large baking sheet. Bake about 25 minutes or until golden brown. Cool for about 5 minutes. Coat hot cookies in remaining sugar, working in batches as needed. Cool completely. Roll cookies in sugar again and serve. Makes about 20 cookies.
