Orange Sauce

An orange flavored sauce with a beef stock base.

Original recipe serves 6.

Scaling (About scaling and units)

Ingredients

1/2 teaspoon salt
1 oranges
1/4 cup butter
1/4 cup all-purpose flour
1 1/3 cups beef stock
1 dash cayenne pepper
2 tablespoons sherry

Preparation:

Juice the orange, and grate the peel to produce orange zest. Set side the juice and the zest. In a medium saucepan, brown the butter and add the salt, cayenne pepper and and flour. Mix well. Stir in beef stock, adding a bit at a time. Add the sherry, orange juice and zest. Serve immediately. Makes about 2 cups of sauce.
