Ingredients (serves 8)

  • salt ; Enough to taste
  • 2 cups white wine ; dry
  • 40 cloves garlic
  • 2 whole chicken ; can use bonless, skinless if desired
  • black pepper ; Enough to taste
  • all-purpose flour ; Enough for dusting
  • 1 tablespoon vegetable oil
  • 2 medium bay leaves
  • 20 ounces chicken broth
  • Directions

    Dust chicken pieces with flour, pat off excess. Heat oil in a large pan on medium until oil slowly smokes. Add chicken, brown, turing to brown all sides (8-10 min.) Remove chicken set aside. Discard all but a little bit of pan drippings and add garlic, cook until lightly brown. Add bay leaves, wine, and chicken broth and cook for another 7-10 mins. Place in center rack of oven for 1 hour.
