Beef with Broccoli

Beef and broccoli in a stir-fry sauce.

Original recipe serves 5.

Ingredients

1 tablespoon water
1 tablespoon cornstarch
1/3 cup soy sauce
14 ounces broccoli ; frozen florets
2 tablespoons vegetable oil ; divided
1 pound beef ; sirloin, cut into 2 x 1/2 inch strips, across grain
5 cloves garlic ; finely chopped
2 tablespoons brown sugar
1 medium onions ; chopped
8 ounces water chestnuts ; sliced, drained

Preparation:

In a large skillet or wok, heat half of the oil over high heat. Add onion, water chestnuts and broccoli. Cook until crisp and tender; for 4 minutes. Remove from skillet and set aside. Add remaining oil to skillet. Stir in beef and garlic. Cook until browned, about 2 minutes. Add vegetable mixture back to skillet. In a small bowl, combine soy sauce, brown sugar, and add to skillet. Combine water and cornstarch to make a smooth paste. Stir into skillet. Cook until sauce thickens and heated through. Serve with rice or Oriental noodes, if desired.
