Italian sausage, eggs and cheese.

Ingredients

8 ounces mozzarella cheese
7 egg(s)
1 pound ricotta cheese
3 pounds Italian sausage ; Cut into pieces

Preparation:

In a large skillet, fry sausage in over medium heat until browned. Add mozzarella and cook until melting, about 1 minute. In a large bowl, beat ricotta and eggs together. Add mixture to skillet, stirring over moderate heat until eggs are cooked. Serve immediate. Serves about 6.
