Pineapple Soup

A cold sweet, pineapple soup. Makes a great first course.

Original recipe serves 6.

Ingredients

3 cups pineapples ; fresh, chunks
1 teaspoon brown sugar
1 cup pineapple juice ; unsweetened
2 tablespoons cilantro ; chopped, fresh
2 jalapeno pepper ; minced
1 red bell pepper ; cored, seeded and chopped
1 cucumber ; peeled, seeded and chopped
1/4 cup lime juice
3 green onions ; chopped, white part and 3 inches of green

Preparation:

Combine pineapple chunks, cucumber, green onions and jalapeno pepper in a food processor and process until smooth. Add cilantro and bell pepper, pulsing until finely chopped. Transfer to a large bowl and add remaining ingredients. Cover and refrigerate 1 hour. Serves 6.
