This marinade is orginally created for chicken but might work with beef too. Mmm... Fajitas.

Original recipe serves 4.

Scaling (About scaling and units)

Ingredients

salt ; to taste
1/2 teaspoon chili powder
1/2 teaspoon cumin
black pepper ; to taste
1/4 cup olive oil
1/4 cup cilantro ; chopped, fresh
2 tablespoons lime juice
lime zest ; from 1 lime

Preparation:

In a shallow, non-metallic dish, combine all ingredients. If you are marinating chicken, this is enough to marinate 1 lb of boneless, skinless, chicken breast. Place chicken in marinade, turning to coat, cover, and refrigerate for 1 to 3 hours. Makes 4 servings.
