Grilled Ambrosia Salad

Bananas, marshmallow, coconut, and grilled pineapple.

Original recipe serves 6.

Ingredients

2 oranges ; peeled, sectioned
1/3 cup marshmallows ; miniature
1/2 cup coconut ; flaked, toasted
1/3 cup yogurt ; nonfat, vanilla flavored
1 tablespoon canola oil
1 tablespoon butter
1 tablespoon brown sugar
6 slices pineapples ; 1/2 inch, patted dry
1 bananas ; peeled and quartered lengthwise
1/2 teaspoon orange zest

Preparation:

Coat a grill rack with cooking spray. Preheat to medium high heat. In a small bowl, combine brown sugar, butter and oil. Brush both sides of pineapple slices with oil and sugar mixture. Place on grill, and grill covered ofr 8 t o10 minutes , turning and basting once, or until slightly charred. Remove from heat and cool for a few minutes. Cut into bite sized pieces. Combine remaining ingredients, pineapple, any remaining juices in a a medium bowl, tossing to mix. Serve warm or chilled. Serves 6.
