A tangy chicken dish

Original recipe serves 4.

Scaling (About scaling and units)
Halve it | Double it | Triple it | Reset
Ingredients

1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon butter ; or margerine
1 pound chicken ; cut into pieces
1 tablespoon brown sugar ; packed
1 cup tomato ketchup
1/2 cup celery
1/2 cup onions
1 cup water
1/2 cup all-purpose flour

Preparation:

Combine flour and salt. Roll chicken pieces in flour mixture to coat. Fry in skillet in hot oil until browned on all sides. In small bowl, combine melted butter, celery, water, brown sugar, onion, pepper, and ketchup. Pour over chicken in skillet. Cover and simmer for 30 minutes, or until thick and celery and onion are tender.

Delicious! This recipe goes great with rice, baked or mashed potatoes.

This recipe is somewhat forgiving regarding the vegetables. You can use green pepper in place of the celery. Green onions in place of the regular onion seems to work also.

You can leave out the celery or replace it with something else, like green pepper.
