Baked Ziti

A hearty baked dish with Ziti pasta, italian sasuage, lots of cheese and tomatoes.

Original recipe serves 6.

Ingredients

1 teaspoon basil ; prefer fresh
16 ounces ziti
2 leaves spinach
red wine
1/2 cup parmesan cheese
10 ounces tomato sauce
olive oil ; first cold press
1 pound beef ; 97%+
3 cups mozzarella cheese
2 tomatoes
1 teaspoon Italian seasoning
1 teaspoon rosemary ; prefer fresh
3 links Italian sausage ; hot

Preparation:

Cook the links and brown the ground beef in a healthy amount of EVOO, season ground beef as desired. Cut links in to 1/4" rounds. Dice tomatoes loosely, also chop spinach, basil, and rosemary, place all in a large bowl, drizzle with EVOO, add some parmesan and toss. (try not to eat it at this point)

Prepare boiling water, if you are using fresh Ziti, drop in to water for about 45 seconds. If you are using dried Ziti, boil until al dente or desired texture. Strain pasta and pat dry.

In bowl, combine Ziti with the beef, link, basil, rosemary, tomato mixture. Add in the 10oz can of tomato sauce. Mix together well.

In a deep, 8" round casserole dish, place Ziti mixture about 1/4 up the side, now add a healthy amount of mozzarella and some parmesan, do this until you have filled the casserole dish. Your last layer should be the remaining mozzarella and parmesan.

Bake in a preheated 350 degree oven until done, I usually bake for 25 minutes. A good sign is the parmesan and mozzarella has formed a nice brown, crusty, yet soft and chewy layer on top.

Serve with a red wine of your choice.

I just added ziti to the ingredient list. I can't believe I left that out! :( The recipe sounds damn good though. :)
