Pineapple Salsa Chicken and Brown Rice

Chicken, vegetables, and rice with some tropical flavors.

Original recipe serves 4.

Ingredients

20 ounces pineapples ; can of chunks, undrained
1 pound chicken ; 4 boneless, skinless breasts
3 tablespoons cilantro ; fresh, chopped
1/2 medium green bell pepper ; chopped
1/2 cup red bell pepper ; chopped
4 cups brown rice ; cooked (2 cups uncooked)
1/2 cup green onions ; sliced thinly

Preparation:

Spray a large skillet with nonstick cooking spray. Brown chicken breasts on both sides, cooking until no longer pink. Combine remaining ingredients except cooked rice in a small bowl. Toss to mix. Place chicken on a bed of brown rice, and top with pineapple mixture. Serves 4.
