Ingredients (serves 4)

  • 2 tablespoons rice vinegar
  • 2 tablespoons pine nuts ; toasted
  • 8 ounces wild rice ; uncooked
  • 1/2 cup sun dried tomatoes ; chopped
  • 1/2 cup artichoke hearts ; marinated
  • 1/4 cup olive oil
  • 1/2 cup olives ; black, pitted, sliced
  • parsley ; minced
  • salt ; to taste
  • black pepper ; to taste
  • Directions

    Cook rice according to package directions. Combine rice with remaining ingredients. Serves 4.
