Wild rice with artichoke hearts and sun dried tomatoes

Original recipe serves 4.

Ingredients

2 tablespoons rice vinegar
2 tablespoons pine nuts ; toasted
8 ounces wild rice ; uncooked
1/2 cup sun dried tomatoes ; chopped
1/2 cup artichoke hearts ; marinated
1/4 cup olive oil
1/2 cup olives ; black, pitted, sliced
parsley ; minced
salt ; to taste
black pepper ; to taste

Preparation:

Cook rice according to package directions. Combine rice with remaining ingredients. Serves 4.
