Chicken Salad Spread

A tasty chicken and vegetable spread. Goes great on crackers!

Original recipe serves 14.

Ingredients

8 ounces chicken ; cooked, diced boneless skinless breast
1 tablespoon butter
2 tablespoons celery ; diced
1 tablespoon parsley ; chopped
2 tablespoons pineapples ; crushed
3 ounces cream cheese ; softened
2 tablespoons onions ; diced
1 ginger ; crystallized, chopped finely
1/4 teaspoon black pepper
paprika ; to taste
1 tablespoon chives ; chopped finely
2 tablespoons cashews ; unsalted, chopped

Preparation:

Melt butter in a skillet over medium heat. Add onion and celery and saute until tender. In a small bowl, combine cooked onion, celery, chives and cream cheese. Add chicken, cashews, pineapple and ginger. Garnish with paprika and parsely and serve with crackers. Makes 1 3/4 cups or 14 servings.
