Ingredients (serves 7)

  • 16 ounces capellini (angel hair pasta)
  • 1 tablespoon garlic ; chopped
  • 2 tablespoons olive oil
  • 3/4 cup onions ; julienned
  • 3/4 cup broccoli ; florets
  • 3/4 cup carrots ; julienned
  • 3/4 cup chicken stock
  • 1/2 cup basil ; chopped, fresh
  • salt ; to taste
  • black pepper ; to taste
  • 1/4 cup parmesan cheese
  • 3 tablespoons butter

    Cook pasta according to package directions. Drain and set aside. In a large skillet, heat oil and saute onions, broccoli, garlic and carrots for 5 minutes on medium heat. Add basil and stock. Simmer, for 3 minutes. Add butter, salt, pepper and cooked pasta. Toss until heated completely and blended well. Sprinkle with the parmesan cheese and serve. Makes 6 to 8 servings.
