Prosciutto and Melon Salsa

A salsa with cantaloupe, prosciutto and other good stuff. Serve with crackers.

Original recipe serves 18.

Scaling (About scaling and units)
Halve it | Double it | Triple it | Reset
Ingredients

1 cup cantaloupe ; finely chopped
1/4 pound prosciutto ; finely sliced
1/4 cup onions ; finely chopped
1/4 cup red bell pepper ; finely chopped
2 teaspoons olive oil
1 teaspoon balsamic vinegar
1/8 teaspoon salt
1 dash black pepper
1 teaspoon lemon juice

Preparation:

Combine all ingredients except prosciutto in a bowl. Mix well. Top crackers with a slices of proscuitto and a spoonful of salsa. Makes 18 servings, assuming two crackers with salsa for each serving.
