Bourbon Chicken

Chicken in a sweet bourbon sauce.

Original recipe serves 4.

Ingredients

1 1/2 pounds chicken ; thigh meat
2 tablespoons bourbon
2 tablespoons wine vinegar ; red
2 slices ginger
3 tablespoons brown sugar ; or to taste
1/4 cup soy sauce
2 tablespoons olive oil
1 green onions ; cut into thirds
2 cloves garlic ; crushed

Preparation:

Place chicken in a shallow 9x13 inch oven-proof pan. Combine remaining ingredients in a small bowl and pour over chicken. Marinate, covered in the refrigerator for 4 hours or overnight, turning occasionially to coat. Preheat oven to 350F (77C). Bake, in the marinade, uncovered for 45 minutes to an hour or until chicken is done and juices run clear. Alternatively, you can put the chicken on skewers and grill it.
