A traditional Middle Eastern salad with bulgar, mint, tomatoes and cucumber.

Original recipe serves 6.

Scaling (About scaling and units)

Ingredients

1 teaspoon mint ; dried
1 cup bulgur ; uncooked
1 1/2 cups tomatoes ; diced
1/2 cup green onions
1 tablespoon olive oil
1/3 cup lemon juice ; fresh
1/4 cup parsley ; chopped
1 cup cucumber ; diced, seeded
1/2 teaspoon salt
1 cup water ; boiling

Preparation:

Combine bulgur and boiling water in a large bowl. Cover and let stand for 30 minutes or until water is absorbed. Add remaining ingredients, blending well. Cover and refrigerate for 2 hours before serving.
