Ingredients (serves 6)

  • 1 teaspoon mint ; dried
  • 1 cup bulgur ; uncooked
  • 1 1/2 cups tomatoes ; diced
  • 1/2 cup green onions
  • 1 tablespoon olive oil
  • 1/3 cup lemon juice ; fresh
  • 1/4 cup parsley ; chopped
  • 1 cup cucumber ; diced, seeded
  • 1/2 teaspoon salt
  • 1 cup water ; boiling
  • Directions

    Combine bulgur and boiling water in a large bowl. Cover and let stand for 30 minutes or until water is absorbed. Add remaining ingredients, blending well. Cover and refrigerate for 2 hours before serving.
