Mediterranean Quesadillas

A mediterranean twist on the classic quesadilla...It's got feta cheese and basil!

Original recipe serves 6.

Ingredients

12 tortillas ; flour, 6 inch
4 ounces feta cheese ; crumbled
olive oil
1 1/2 cups basil ; lightly packed, fresh leaves
1 cup red bell pepper ; thinly sliced, roasted

Preparation:

Brush 1 side of half of the tortillas with olive oil. Turn over, and sprinkle surface with 2 tablespoons of feta cheese. Top with 6 to 9 basil leaves and about 9 thin pepper strips. You can optionally add olives, if desired also. Cover with a second tortilla and brush lightly with olive oil. Working in batches, cook quesadilla on medium heat in a large skillet for 2 to 3 minutes on each side or until lightly browned. Cut each quesadilla into 6 wedges.
