Ingredients

1 tablespoon cinnamon
1 tablespoon vanilla extract ; for topping
7 apples ; peeled, cored and chopped
1 1/4 cups brown sugar ; 1/2 cup for filling, 3/4 cup for topping
1 cup butter ; for topping, you might want less than this if too greasy
1/4 cup all-purpose flour
3 cups oats ; for topping

Preparation:

Preheat oven to 350 degrees F. Mix the topping ingredients in a bowl until the butter is thoroughly incorporated and the mixture is the consistency of fine meal. Set aside. In another bowl, toss the sugar, flour, and cinnamon with the chopped apples. Place the apple mixture in a greased 9x13-inch baking pan and cover with the topping. Bake until golden brown, about 30 minutes. Serves 12. Variations include using honey to sweeten the apples or using blueberries in place of half the apples.
