Brazilian Bean Stew

Black bean stew with chorizo, ham and a whole lot of other stuff.

Original recipe serves 6.

Ingredients

1/3 pound ham ; cooked, chopped
1 whole chili pepper ; chopped
1 medium onions ; chopped
1/4 pound chorizo ; chopped
1 pound sweet potatoes ; peeled and diced
1 large red bell pepper ; chopped
29 ounces tomatoes ; canned, in juice
2 cloves garlic ; minced
1 1/2 cups water
1 whole mangoes ; peeled, diced, seeded
1/4 cup cilantro ; chopped
1/4 teaspoon salt
32 ounces black beans ; canned, drained and rinsed
1 tablespoon canola oil

Preparation:

Heat oil in a large pot over medium heat. Add the ham and chorizo cooking for 2 to 3 minutes. Add onion, and cook until tender. Add garlic, cooking until tender. Add water, peppers, canned tomatoes with juice and sweet potato. Bring to a boil, and then reduce to low heat. Simmer, covered until sweet potatoes are tender, about 15 minutes. Add the beans, and cook uncovered, stirring until cooked through. Add the salt, mango, and cilantro.
