An easy Mexican dish with tortilla chips and chicken strips.

Original recipe serves 8.

Scaling (About scaling and units)
Halve it | Double it | Triple it | Reset
Ingredients

1 1/4 pounds chicken ; boneless skinless breast, cut into strips
16 ounces corn ; canned, drained
2 tablespoons chili powder
1 teaspoon onion powder
1 tablespoon vegetable oil
15 ounces tomato sauce
1 cup cheddar cheese
4 ounces chili pepper ; chopped, green
4 ounces tortilla chips

Preparation:

Heat oil in a large skillet over medium heat. Add chicken and cook 5 minutes, stirring frequently. Add remaining ingredients except tortilla chips and bring to a boil. Reduce heat to medium low and cook an additional 10 minutes,stirring constantly until chicken is cooked through. To serve, spoon mixture over tortilla chips and top with cheddar cheese.

pretty easy to make and tastes good too. i used canola oil instead of vegetable oil.
