Wine and Vanilla Peach Melba

Fat free, juicy and peachy

Original recipe serves 8.

Ingredients

2 cups red wine ; sweet , red or white wine
2 teaspoons vanilla extract
4 peaches ; large, ripe
2 cups sugar

Preparation:

In a 9x13 inch baking dish mix wine and vanilla with peaches cut sides down. Marinate at room temp. for 1 to 2 hours, occasionally spooning juice over peaches to keep moist. Transfer peaches cut sides up to a platter; refrigerate. Pour marinade into small saucepan, stir in sugar. Bring to a boil and boil until reduced by half and syrupy, appx. 7 mins. Let cool to room temp. Serve with your favorite flavor of sorbet.
