Cajun Chicken Pasta

Linguini and chicken cooked up cajun style in a creamy sauce.

Original recipe serves 2.

Ingredients

1/2 pound chicken ; boneless breasts, cut into strips
2 teaspoons cajun seasoning
1 green onions ; chopped
1 medium green bell pepper ; sliced
1 medium red bell pepper ; sliced
2 tablespoons butter
1/4 teaspoon salt
1/4 teaspoon lemon pepper
1/4 cup parmesan cheese
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
1 cup heavy cream
4 ounces linguini
1/4 teaspoon basil

Preparation:

Bring a pot of water to a boil and add linguini. Cook for 8 to 10 minutes or until al dente, and drain. Set aside. Place the chicken and cajun seasoning in a plastic bag and shake to coat. Melt butter in a skillet over medium-high heat, and saute the chicken until almost tender, about 5 to 7 minutes. Add the green onion, and the red and green peppers. Saute, stirring, for about 2 or 3 minutes. Reduce heat and add the black pepper, cream, garlic powder, lemon pepper, basil and salt. Cook enough to heat through. Toss with linguini, sprinkle with parmesan cheese and serve.
