Sesame Kale

Sauted kale tossed with sesame.

Original recipe serves 6.

Ingredients

2 pounds kale ; trimmed, chopped
1/4 teaspoon cayenne pepper
2 teaspoons sesame seeds ; toasted
2 teaspoons sesame oil
2 cloves garlic ; minced
1 tablespoon vegetable oil
1 cup water
salt ; to taste
black pepper ; to taste

Preparation:

Bring water to a boil in a Dutch oven. Add the kale, and cook for 4 minutes, stirring occasionally. Uncover and cook until the water evaporates. Heat oil in a large skillet over medium heat. Add the cayenne and garlic, and saute for 1 minute. Add the kale and cook for an additional 3 minutes, stirring. Transfer kale to a large bowl and toss with the oil. Season to taste with salt and pepper. Garnish with sesame seeds.
