Watercress Red and Green Leaf Rice

Quick, very easy, and healthy.

Original recipe serves 6.

Scaling (About scaling and units)
Halve it | Double it | Triple it | Reset
Ingredients

1 cup arugula ; chopped
1 1/2 cups watercress ; chopped
1 clove garlic ; minced
1 1/2 cups radicchio ; jullienned
1 tablespoon olive oil
1 tablespoon parsley ; chopped
1/2 cup brown rice ; uncooked

Preparation:

Cook rice according to package directions. Heat oil in a large skillet over medium heat. Saute the arugula, watercress and garlic until leaves are slightly wilted. Add the other ingredients and the cooked rice. Season to taste with salt and pepper. Toss well, remove from heat and serve.
