Vegetable Beef Stew

As the name implies, it's beef and vegetables in a stew, the ultimate comfort food. Serve with mashed potatoes.

Original recipe serves 4.

Ingredients

1 1/2 pounds beef ; cubed
3 tablespoons vegetable oil
2 cloves garlic ; minced
4 cups beef broth
1/4 cup tomato paste
1 medium onions ; chopped
8 ounces carrots ; sliced
4 ounces mushroom
2 tablespoons thyme
5 tablespoons all-purpose flour

Preparation:

Roll beef cubes in flour to coat. Season with salt and pepper to taste. In a Dutch oven, heat oil over medium heat. Add meat and brown on all sides. Drain fat. Add the tomato paste, garlic and broth. Bring to boiling, reduce heat, cover and simmer to 1 to 1 1/2 hours. Add vegetables, and season to taste with additional salt and pepper. Cover and simmer for an additional 30 minutes or until vegetables are tender.
