Soft, chewy cookies made with pumpkin

Original recipe serves 36.

Ingredients

1 cup pumpkin ; puree
1 cup sugar
1 cup brown sugar ; packed
1 egg(s)
1 cup oats ; rolled
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup raisins
2 1/2 cups all-purpose flour
8 ounces butter ; softened

Preparation:

Preheat oven to 350F (175C). In a large bowl, cream together the brown sugar, sugar and butter until fluffy. Beat in the pumpkin, egg, and vanilla. In a medium bowl, combine the remaining ingredients, and add to the pumpkin mixture. Combine well. Drop teaspoonfuls of the batter onto cookie sheets covered with parchment paper or lightly greased with cooking spray. Bake 12 to 15 minutes or until lightly browned around the edges.
