Grapefruit and Avocado Salad

A rather cool and tangysalad.

Original recipe serves 5.

Ingredients

1/2 whole avocados ; peeled, pitted and cut into 1 inch cubes
2 whole grapefruit ; pink, peeled
1 teaspoon vegetable oil
5 cups iceberg lettuce ; or mixed greens
1/4 teaspoon black pepper
1/4 teaspoon salt
1/4 cup white vinegar
3 tablespoons honey

Preparation:

Cut one of the grapefruit in half, and reserve the other half. Cut the rest of the grapefruit (half plus one whole) into segments. Squeeze juice of the reserved grapefruit half into a small bowl. Add honey, salt, pepper, vinegar and oil to the grapefruit juice, whisking constantly until blended. Place lettuce in a serving platter. Arrage the grapefruit segments and avocado over the lettuce, and drizzle with the grapefruit dressing.
