Ingredients (serves 4)

  • 3 slices bacon
  • 3 large leeks ; Cleaned, trimmed and diced
  • 2 cups onions ; diced
  • 1 pound potatoes ; peeled and thinly sliced
  • 5 cups chicken broth
  • 1/2 teaspoon thyme
  • 1/4 teaspoon black pepper

  • You will also need: saucepan

    Directions

    Cook bacon in a large saucepan; remove to towel and drain. Add leeks to pan with onion. Cook over medium heat for 5 minutes. Add potatoes, chicken broth, thyme, and black pepper. Bring to a boil. Reduce heat to low and simmer for 30 mins. Puree in a blender. Serve topped with crumbled bacon.
