Chicken Cacciatore

Chicken with garlic, onions and peppers, baked in a wine and tomato sauce.

Original recipe serves 1.

Ingredients

1/2 whole chicken ; on bone, cut up
1 tablespoon olive oil
1 clove garlic
1/2 whole onions
4 whole mushroom ; sliced
1/2 cup white wine
1/2 medium red bell pepper ; chopped
1/2 medium green bell pepper ; chopped
1/2 cup chicken broth
1/2 cup tomato sauce

Preparation:

In a large skillet, saute the chicken pieces with the mushroom, peppers, onions and garlic until the chicken is crisp. Transfer chicken and vegetables to a baking dish. Preheat oven to 350F. In a small bowl, combine the broth, tomato sauce and wine and pour over chicken. Bake for 15 minutes at 350F.
