Muffins made with apples, cinnamon and yogurt.

Original recipe serves 6.

Ingredients

1 cup apples ; peeled, chopped
2 teaspoons cinnamon
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 cup butter ; melted
2 egg(s)
1 cup yogurt ; vanilla flavored
1/2 cup sugar

Preparation:

Preheat oven to 375F. Combine flour, cinnamon, sugar, baking and soda in a large bowl. In a separate bowl, wcombine the eggs, butter and yogurt. Pour the egg mixture into flour mixture. Stir in the apples and combine well. Pour into muffin tins and bake for 20-25 minutes, or until a toothpick comes out clean.
