Haddock Veracruz

Haddock in a Mexican-style tomato sauce.

Original recipe serves 4.

Ingredients

1 pound haddock ; fillets
1/3 cup salsa
21 fluid ounces chicken broth
10 3/4 fluid ounces tomato soup
2 teaspoons cilantro ; chopped
1 tablespoon lime juice
2 cups white rice ; uncooked
1 clove garlic ; minced

Preparation:

Cook rice according to package directions. Place haddock in a 2 quart baking dish. In a small bowl, combine garlic, cilantro, soup, broth, lime juice and sala, and pour over the haddock. Bake at 400F (200C) for 20 minutes or until fish flakes easily with a fork. Serve with rice.
