Quesadilla's for the morning

Original recipe serves 1.

Halve it | Double it | Triple it | Reset
Ingredients

1 whole egg(s)
2 tablespoons cheddar cheese
2 medium tortillas
1 tablespoon onions ; diced
1 tablespoon green bell pepper ; diced
1/2 cup monterey jack cheese

Preparation:

In a small skillet, whisk egg, green pepper, onion and half cup of cheese. Cook over medium heat and flip one time. Heat tortillas in microwave for 30 seconds. ( a toaster oven will heat them up even better though) Layer a tortilla with the egg mixture then top with second tortilla. Cut into 6 pieces. Makes 1 serving. :o)
