Roasted Garlic Spread

This mixture makes a great dip when mixed with sour cream. Or, mix with softened butter to make garlic bread,

Original recipe serves 6.

Ingredients

3 heads garlic ; unpeeled
3 tablespoons olive oil ; divided
1 tablespoon lemon juice
1/4 teaspoon salt

Preparation:

Coat a grill rack with cooking spray. Preheat the grill to medium heat. Cut off the top of the garlic heads to expose the cloves. Place the garlic on a 12x8 inch piece of heavy foil. Drizzle about 1tsp of olive oil onto each garlic head. Bring the sides of the foil up around the garlic to close. Seal loosely to allow room for expansion. Place foil on grill for 35-45 minutes to 1 hour, covered, until garlic is very soft. Remove from foil and cool slightly.

Scoop garlic pulp from each clove, discarding the peel, placing pulp into a small bowl. Mash garlic and blend with salt, lemon juice and remaining oil. Use as a spread on bread, vegetables or crackers.
