Grilled Salmon

Salmon marinated in an Asian-style marinade, and grilled.

Original recipe serves 6.

Ingredients

4 fillets salmon ; 4 oz each
2 tablespoons soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon cayenne pepper ; flakes
3/4 teaspoon ginger ; ground
1 clove garlic ; minced
1 1/2 teaspoons brown sugar
2 tablespoons green onions ; thinly sliced
2 tablespoons balsamic vinegar
1/4 cup peanut oil

Preparation:

In a small bowl, whisk together all ingredients except salmon. Place salmon in a separate bowl, and pour the marinade over it. Cover with plastic wrap and refrigerate for 4-6 hours.

Preheat a grill rack. Oil the rack and adjust height to about 5 minutes above coals. Grill salmon for 10 minutes per inch of thickness, or until fish flakes easily with a fork. Turn fillets halfway through cooking.
