Ham and Cheese Stuffed Potatoes

A baked potato stuffed with ham and various cheeses.

Original recipe serves 8.

Ingredients

2 tablespoons butter
4 large potatoes
1 cup ham ; cooked, diced
2 tablespoons chives
1/2 cup Swiss cheese ; shredded
1/2 cup cheddar cheese ; shredded
1/2 teaspoon salt ; or to taste
1/2 teaspoon black pepper
1/2 cup milk
3 ounces cream cheese

Preparation:

Preheat an oven to 400F (205C). Arrange the potatoes on a foil-lined baking sheet and bake for 1 hour or until tender. Allow to cool for 30 minutes.

Cut each potato lengthwise. Scoop out the middle, leaving about 1/4 inch shells and place pulp in a large bowl. Add the cheeses, milk, salt and pepper and beat using an electric mixer until well blended. Add chives and ham. Spoon the potato and cheese mixture into the potato skins. Arrange potatoes on a baking sheet and bake at 350F (175C) for 15 minutes.
