Honey Garlic Chicken

Chinese style, deep fried chicken with a honey and garlic sauce.

Original recipe serves 4.

Ingredients

1 cup all-purpose flour
1 1/2 pounds chicken ; boneless breast, cut into chunks
4 tablespoons cornstarch
1 teaspoon corn oil ; plus more for frying
2 1/2 teaspoons salt ; divided
1 1/2 cups water ; divided
1 1/2 teaspoons baking powder
3/4 cup honey ; orange blossom
3/4 cup sugar
2 tablespoons lemon juice
4 cloves garlic ; pressed
1 habanero pepper ; minced, or to taste

Preparation:

Make the sauce by combining the honey, lemon juice, 1/2 cup of water, 1 tsp of salt in a saucepan. Boil until everything dissolves. Add the pepper and garlic. Taste, and season with extra pepper or salt to taste. Cook until the sauce is about the consistency of pancake syrup. Set aside.

In a bowl, whisk together the cornstarch, flour, baking powder, the remaining salt, and water to make the batter.

Heat 2 inches of oil in a heavy skillet or pot to 300F (150C).

Season chicken with additional salt, if desired. Roll chicken pieces in the batter. Add the coated chicken to the hot oil and fry until browned and cooked through. Monitor the temperature with a thermometer.

Drain the chicken on paper towels. Transfer to a serving dish and pour the sauce over it, and serve.
