Chicken Gumbo

It has a bit of a kick that sneaks up on you.

Original recipe serves 6.

Scaling (About scaling and units)

Ingredients

1/2 cup celery ; chopped
2 stalks scallions
3 cups chicken broth
1 teaspoon jalapeno pepper ; minced
1/2 teaspoon thyme
1 bay leaves
2 teaspoons vegetable oil
1/4 cup all-purpose flour
1 teaspoon black pepper
1 1/2 pounds chicken ; boneless, skinless breast, cut into 1 inch strips
1 cup potatoes ; cubed
4 cloves garlic ; minced
1 cup carrots ; chopped
1 cup okra

Preparation:

Add oil to a large pot and heat over medium flame. Add flour, stirring constantly and cook until flour begins to turn golden brown. Slowly stir in broth using a wire whisk and cook for 2 minutes. There should be no lumps. Add all ingredients except okra. Bring to a boil, reduce heat, and let simmer for 20-30 minutes. Add okra and let simmer for additional 15-20 minutes. Remove bay leaf. Serve with rice. Makes about 6 servings.
