Grilled Chicken with Peaches and Arugula

Who doesn't like grilled peaches and onions with chicken?

Original recipe serves 4.

Ingredients

4 cups arugula ; or one bunch, with stems removed
3 whole peaches ; cut into wedges
1 pound chicken ; (4 boneless skinless breasts)
2 medium onions ; red, cut into 1/2 inch slices
2 tablespoons balsamic vinegar
1 1/3 tablespoons olive oil ; divided
1/4 teaspoon black pepper
1/4 tablespoon kosher salt
2 ounces bleu cheese ; broken into pieces

Preparation:

Heat a grill to medium high heat. Brush the chicken with 1/3 tablespoon of the olive oil. Season with salt and pepper. Combine peaches, 1/4 tsp each of salt and pepper, and 1 tbsp of the oil in a medium bowl. Grill the onions and chicken until the onions are tender and the chicken is cooked through. Grill the peaches 2 minutes per side, or until charred.

Toss grilled peaches and onions with remaining oil, arugula, and balsamic vinegar. Top with bleu cheese and serve with the chicken.
