A peachy chicken dish, light and sweet.
Ingredients (serves 4)
Preheat oven to 375 degrees.
In a HOT pan, melt butter, combine sugar, give a quick stir or two, add in pecans and peach halves. Keep on heat, turning halves on occasion until golden brown.
Sprinkle ginger on both sides of the uncooked chicken breasts, place in baking pan. Pour peach and pecan confection mixture over. Cover with foil.
Place in oven for 30-35 minutes or until chicken runs clear. Turn over to broil, remove cover, and keep in over another 5-10 minutes or until everything has a nice gold coat. Consume.
