Ingredients

1 1/2 pounds turkey ; ground meat
1 whole egg(s)
1 cup bread crumbs
1 whole red bell pepper ; diced
6 whole olives ; stuffed green ones, chopped
8 ounces tomato sauce ; small can

Preparation:

Preheat oven to 375. Grease a medium sized baking dish or roasting pan with cooking spray. In a bowl, mix together the ground meat, breadcrumbs, egg, diced peppers, chopped olives, and one-third of the tomato sauce. Form into the shape of a loaf. Pour the rest of the tomato sauce over the loaf, evenly. Place potatoes and a vegetable of choice around the meat loaf in the pan. The photo shows roasted red potatoes with garlic and paprika, and burnt broccoli, prepared with olive oil and garlic. Carrots sprinkled with butter and dill works well too. Bake uncovered for one hour. Enjoy!
