A refreshing summer salad with fresh corn.

Original recipe serves 8.

Ingredients

8 ears corn ; husked
1 whole cucumber ; peeled, chopped
1 whole onions ; red, chopped
1 whole red bell pepper ; chopped
1/2 cup Italian dressing
1 whole tomatoes
1 whole zucchini ; chopped

Preparation:

Cut the corn kernels off of the cobs. Combine the corn and remaining ingredients in a large bowl. Toss with the Italian dressing. Refrigerate for at least 1 hour, or until chilled before serving.
